Recipe: Delicious Pineapple upside down cake

Pineapple upside down cake. The cake was a modern marvel because it relied on the recently introduced innovation of canned pineapple rings and preserved maraschino cherries. This is a hybrid pineapple upside-down cake which I've developed over the years. Instead of pineapple rings, I use crushed pineapple, coconut, and honey.

  2. You need 150 gms of All purpose flour.
  3. It's 150 gms of powdered sugar.

  8. It's of quarter cup chopped pineapple.

Cut the maraschino cherries in half, and place one half, cut-side up, in the center of each pineapple ring. Make topping: Mix butter with brown sugar and add to prepared cake pan. To make the topping: Melt the butter, and mix with the brown sugar, cinnamon, and ginger. Spoon the mixture into the prepared pan.

Pineapple upside down cake step by step

  1. In a baking dish, melt 3-4 tbsp butter and sprinkle brown sugar/ white sugar over the butter..
  2. Place the pineapple slices over the butter and sugar mixture. Place glazed cherries in the center of each pineapple slice and where ever there are gaps. Set aside..
  3. For the cake. Preheat an oven at 200 degree for 10 mins..
  4. Sieve flour, baking powdered, baking soda and a pinch of salt together and set aside..
  5. In a mixing bowl, cream the butter & sugar till light & fluffy..
  6. Add the eggs one at a times. Adding 1 spoon of flour for each egg. Whisk. Add vanilla essence & mix well..
  7. Now add the flour using cut & fold method..
  8. If the batter is too thick at this stage you can add milk..
  9. Once the batter is well mixed fold it the chopped pineapple pieces..
  10. Once the batter is ready, transfer to the baking dish with the prepared pineapple slices & bake for 40-45 mins at 150 degree or depending on the oven..
  11. Remove for oven and cool on wire rack. Once cooled turn upside down..
  12. Cake and serve. This cake taste best with a scoop of vanilla ice cream. Enjoyyy.
