Recipe: Perfect Key Lime Pie

Key Lime Pie All of the KLP we have had in Florida (including very recently) has been smooth creamy and sometimes even very light as if whipped cream had been added. Can you use regular limes instead of Key limes? You can use regular limes in place of Key limes in any Key lime recipe. You can cook Key Lime Pie using 9 ingredients and 10 steps. Here is how you achieve that.

Ingredients of Key Lime Pie

  1. You need 1 of FOR OREO CRUST.
  2. You need 24 of whole oreo cookies.
  3. It's 1/4 cup of melted butter.
  4. It's 1 of FOR PIE FILLING.
  5. Prepare 5 of egg yolks.
  6. You need 2 of 14 ounce cans sweetened condensed milk.
  7. You need 1 cup of fresh lime juice, from either key limes or regular limes.
  8. You need 1/2 tsp of lime zest grated from about 1/2 of your regular limes or 1 key lime.
  9. It's 1 dash of salt.

Key limes are a bit more tart than their traditional counterparts, but the results of this substitution will still be delicious. This is the gold standard of key lime pie recipes. I live in Cuba where key limes are abundant, but Cuba also juices those limes and packages them in small boxes that contain about one cup each. I have tried both ways, with fresh key limes and that packaged lime juice and there is absolutely no difference.

  4. Combine cookies and butter in food processor and whizz until finely ground. Put moist crumbs in your prepared pie plate and pack into an even layer around sides and bottom of pie plate. Freeze while making filling..

  6. Mix the egg yolks, condensed milk, lime juice, lime zest and salt, whisk or beat until thoroughly combined..
  7. Pour into oreo crust. Bake in a 350 oven for 8 to 10 minutes just to lightly set and cook eggs, do not overcook!.
  8. Cool on rack, then chill..
  9. Garnish with sweetened whipped cream and chocolate shavings.
  10. NOTE This pie can be frozen, before serving thaw at toom temperature 15 minutes and garnish with the whipped cream and chocolate shavings, refrigerate any leftovers..

But that is Cuban lime juice. If Key limes aren't available in your grocery store, look for bottled Key lime juice near the other bottled lime juices. Cool the baked crust, and add the Key lime filling. Key lime pie ingredients are simple: sweetened condensed milk, lots of lime zest and juice (preferably from key limes), and just enough egg to give it a good set. Pour the filling into a pre-baked graham cracker crust, bake briefly until the pie is set, and let it chill.
